Maybe Not The Healthiest Choice (but I Tried) - My First Attempt at a "Gourmet" Pizza with Arugula, Mushrooms, & BBQ Chicken

I seriously had to look up how to bake pizza in the oven. I've never done it before, so didn't know the temperature or how many minutes to do so. I think I kept it in for two minutes too long, but this was practice. I got good naan bread, which was thin, so it definitely would appeal to those who prefer their pizza on the crispier side.

In the past week I've read well over 1,400 pages of writing and delved into layers and layers of other reading material, all for the love and commitment to collegial service. It is work I chose to take on and although my eyes are throbbing from the reading, squeaky toys from Karal, daily 5 miles walks, and peace & quiet have been good companions.

I am currently in love with arugula and wonder how I've gone so many years without adding it to my salads (and yes, it's good on pizza, too).

Today, I look forward to taking part in a doctoral project on teacher leadership and the National Writing Project, collaborating on a proposal with Jessica Early on work we've committed to for 2022, and finalizing steps for the rigorous two weeks ahead.

I heard from the director of CAE that the PD I digitally, asynchronously, sent over the weekend was awesome, which simply made me feel more pep in my step to kick off a new week.

I am reading and hearing about Covid numbers and their stifling effects - schools having to make major decisions all across the country. Parents are juggling, as well. Colleagues in K-12 and higher education are trying to recover, avoid, and be pro-active. Phew. The innocence from birth to 2019 is missed (and I've never been an innocent fellow).

Take care of yourselves out there. Make more pizzas. Do well for your stomach. I got more work to do.
